Chicken Artichoke Kebabs - Chefanie
These Chicken Artichoke Kebabs are a delightful combination of tender chicken and tangy artichoke hearts, infused with Mediterranean flavors. Perfect for grilling outdoors or indoors, these kebabs make for a flavorful and satisfying meal.
Ingredients:
- 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 can artichoke hearts, drained and quartered
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- Wooden skewers, soaked in water for 30 minutes
Instructions:
Olive oil, minced garlic, oregano, thyme, salt, and black pepper should all be mixed together in a bowl
Make sure the chicken cubes are well covered when you add them to the marinade
For at least an hour, cover and put in the fridge
Warm up the grill over medium-high heat
On the wet skewers, alternately thread marinated chicken and artichoke hearts that have been cut into quarters
The chicken should be golden brown and cooked all the way through after 6 to 8 minutes on each side
If you want, you can serve it hot and top it with fresh herbs
