Paleo Chocolate Banana Muffins
These Paleo Chocolate Banana Muffins are a delicious and healthier alternative to traditional muffins. Made with real ingredients like bananas, almond butter, and coconut flour, they are gluten-free, dairy-free, and refined sugar-free.
Ingredients:
- 3 ripe bananas, mashed
- 3 eggs
- 1/4 cup almond butter
- 1/4 cup coconut oil, melted
- 1/2 cup coconut flour
- 1/4 cup cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 cup dark chocolate chips optional
Instructions:
Preheat oven to 350F 175C
Grease a muffin tin or line with paper liners
In a large bowl, mix mashed bananas, eggs, almond butter, coconut oil, honey or maple syrup, and vanilla extract until well combined
In a separate bowl, whisk together coconut flour, cocoa powder, baking powder, baking soda, and salt
Add dry ingredients to wet ingredients and mix until just combined
If using, fold in dark chocolate chips
Spoon batter into muffin tin, filling each cup about 3/4 full
Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean
Allow muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely
