Ice Cream Cone Cookies

These adorable ice cream cone cookies are a delightful treat that look like real ice cream cones. They're perfect for summer parties, birthdays, or just a fun baking project with the kids.

Ingredients:

  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 12 ice cream sugar cones
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon vegetable oil
  • Assorted sprinkles

Instructions:

Preheat the oven to 350F 175C

In a large bowl, cream together the butter and sugar until light and fluffy

Beat in the egg and vanilla extract until well combined

In a separate bowl, whisk together the flour and salt

Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms

Take a tablespoon of dough and shape it into a small log

Gently press the log into an ice cream cone, shaping it to fit the cone's opening

Repeat with remaining dough and cones

Place the filled cones on a baking sheet and bake in the preheated oven for about 12-15 minutes, or until the cookies are lightly golden around the edges

Remove from the oven and let the cookies cool on a wire rack

In a microwave-safe bowl, melt the chocolate chips and vegetable oil in 20-second intervals, stirring after each interval, until smooth and fully melted

Dip the tops of the cooled cone cookies into the melted chocolate, allowing any excess to drip off

Sprinkle the dipped cookies with assorted sprinkles before the chocolate sets

Place the cookies back on the wire rack to allow the chocolate to harden

Once the chocolate is set, your ice cream cone cookies are ready to be enjoyed!
